About Chef Mario Caramella

Chef Mario, originally from Milan, is a renowned and recognized chef within and outside his native Italy. In 2000, as Founder and President of the global online community, GVCI, he established a network of chefs and restaurateurs working outside Italy which today represents more than 2,000 members in 70 countries, and is recognized within the industry as a community of F&B leaders.

Mario has headed up the kitchens of some of the region’s most well-known and awarded restaurants. In Hong Kong, he re-opened The Mistral in 1991, quickly establishing it as one of the colony’s finest restaurants. Later, he served as Chef de Cuisine at Grissini, the flagship Italian restaurant of the Grand Hyatt Hong Kong. In Sydney, he opened Al Porto at Star City Casino, and has also been Executive Chef for Hyatt Hotels in Thailand and Bali.

Chef Mario arrived in Singapore in January 2011, as a chef Patron of FORLINO AT One Fullerton. His new venture at inITALY sees his signature style in full flight, combining authentic Italian ingredients with culinary integrity, alongside a deep understanding of the art of hospitality.

Spaghettini restaurant is presenting the impeccable cuisine of Acanto for fine Italian dining experience. Highlights are the hotel’s Chef de Partie, Davide Cassago, formerly in Michelin star restaurant, Vecchia Filanda, and Sous Chef Banqueting Ivan Maffi, a protégé of celebrity chef Gualtiero Marchesi, famed as the founder of modern Italian cuisine.

During this promotion, Acanto’s signature dishes will be featured at Spaghettini: crunchy prawns with toasted almonds and fresh parsley sauce; spaghetti with clams, courgettes and light chili sauce; oven baked sea bass with capers, squid and cherry tomatoes; rack of lamb with black olive pâté and Parmesan aubergines.

To end a great dinner, Acanto’s unique tiramisu with strawberry, masala and dark chocolate, will be one of the delightful desserts on offer.
